I’ve been buying so much zucchini this summer and had to start getting creative with my zucchini dishes because I was getting a little sick of zucchini. So, I decided to make this *somewhat* hidden zucchini orzo. I chopped up the zucchini really small in my food processor and you barely even notice it’s in there, which is great for picky kids (and picky adults😉). And what’s great about this dish is you can use whatever herbs you have on hand to give it some extra flavor–I’ve made this with basil, dill, parsley, and thyme.
